Crunchy Pita Salad
Trader Joe’s Organic Rosé Vinaigrette is light, tangy, and slightly floral, just like its namesake wine varietal. Made with organic sunflower oil, organic red wine vinegar, and organic rosé wine vinegar, it has savory depth thanks to dried garlic, organic dried basil, organic dried oregano, with a bit of organic agave syrup to sweeten the deal. It’s fantastic tossed with hot pasta and halved cherry tomatoes for a light supper.
In this recipe modeled after Lebanese fattoush salad, we've paired this Rosé Vinaigrette with crisp salad greens and cucumbers, tangy tomatoes, sharp red onion, and fresh herbs. Crunchy pita chips are coated in olive oil to retain their crisp texture atop the dressed greens, and a squeeze of lemon lends extra brightness.
Add pita chips and olive oil to a medium bowl and toss to coat; set aside.
Add romaine and 2 tablespoons dressing to a large bowl, toss to combine. Add more dressing to taste. Top with cucumbers, tomatoes, red onion, and pita chips. Garnish with a squeeze of lemon and a few grinds of salt & pepper. Enjoy immediately, as-is or topped with grilled chicken or tempeh.
